Yesterday I led an Eco-Kayaking Trip on Pittwater the Estuary part of the great Hawkesbury Nepean River which meets the Ocean at Palm Beach in Sydney’s North.
Pittwater is an awe inspiring waterway with much of it within Kuringai Chase National Park.

During the kayaking and various walking side-trips I shared information about local Bush Tucker including Warrigal Greens also called Native Spinach. As People were interested in how to eat this nutritious plant I’ve included on of the recipes here.
Warrigal Greens Tetragonia tetraganoides
Coastal throughout many Aboriginal Countries including Guringai Homelands (Pittwater) and Awabakal (Newcastle) and Darkanjung. Generally growing in salty edge such as near Mangroves and at the landward side of Saltmarsh.
I acknowledge the Traditional Custodians of the land and pay respect to the present and the sprit of those past and look with joy to those of the future.

A traditional food high in iron and vitamins this plant can be used in similar ways to imported spinach.
Koorie People (general word for Aboriginal People of NSW – from the People) have Warrigal Greens as part of the great variety of nutritious Bush Foods. Koorie Peoples showed and shared this plant with those arriving in their Country to assists the new comers with ailments relating to poor diet.
Following is a modern recipe combining bush foods with others food reflecting the current cosmopolitan place we call Australia.
Warrigal Greens Dip or Pesto or Pasta Source
Four Handfuls of Tetragonia (Warrigal Greens) leaves
Wash and blanch or steam.
Blend 1/2 to 1 cup of macadamia nuts and add warm leaves.
Blend mixture together.
Quantities of the following are as per your personal taste.
Garlic or parmesan cheese.
Silken Tofu can also be added for protein and to make the mixture more creamy without the need for dairy.
Blend all together and use as Dip, Pesto, Pasta Sauce – or whatever else you think of.
NB Leaves can also be mixed with Salad Greens.
Leaves will have a different taste and nutritional composition depending on where they are growing.
Seeds and cuttings grow well in sandy rich soil so add this great plant to your garden or grow in a pot. A shaded location will result in larger thinner leaves being produced.
From watching, Cherokee Elder Grandmother Pa’Ris’Ha, when she harvests plants or prepares offerings I have witnessed the love and care which She does this. Plus Parisha Taylor gives an offering the plant fulfilling the 2-way flow of giving and receiving.
When I pick the leaves I give an offering of corn-meal (corn a very old universal plant representing giving) or local offerings such as the Blue Eucalyptus Leaves. As a minimum I acknowledge the plants as I pick the leaves and appreciate them.
